The kind of noodles used is a matter of personal preference. Definitely will be a repeat for us- so filling and healthy! I used 3 cups of chicken stock and it was more saucy but watery than soupy. We are Jordan and Clark Cord and Scout! Most soba noodles on the market are a mix of both buckwheat and regular wheat, just fyi. Finally got to the recipe! There are several brands on the market now.
